Quesadilla Casserole

Last night I made something a little different for dinner. I wasn't quite sure if the hubby would like it but he actually loved it. This was so easy to make and tasted so good!! I added brown rice as a fuller, it also called for tomato sauce but I used Enchilada sauce instead!!

Ingredients

1 lb ground beef or turkey
1/2 chopped onion
1 can of enchilada sauce
1 can of black bean drained and rinsed
2 cups of brown rice
1 can chopped chilies
2 tsp of chili powder
1 tsp Minced Garlic
1/2 tsp of oregano leaves
1 tsp of ground Cumin
1/2 tsp Crushed Red Pepper
1 packed of wheat tortilla's
2 cups of low fat Mexican cheese
1 cup of low fat sour cream (optional)
Directions
1. In separate Pan bring water to a boil and then add brown rice; drain
Brown beef or turkey and onion in large skillet on medium high heat; drain
Add Enchilada sauce, beans and green Chile's; mix well.
Stir in all of the Spices; add red pepper to taste,if desired.
Bring to Boil Reduce heat to low; simmer for 5 mins.
2. In a 13x9 baking dish with nonstick cooking spray. Layer bottom of Baking Dish with Wheat tortillas; spread 1/2 cup of beef or turkey mixture; add low fat shredded Mexican cheese to top of each beef or turkey mixture; and repeat; last tortillas add reminder of enchilada sauce and low fat shredded cheese to top;
3. Bake at 350 for 15 mins or until heated through. Let stand for 5 minutes before serving. Top with Low fat sour cream (optional)
