Quesadilla Casserole

Last night I made something a little different for dinner. I wasn't quite sure if the hubby would like it but he actually loved it. This was so easy to make and tasted so good!! I added brown rice as a fuller, it also called for tomato sauce but I used Enchilada sauce instead!!

Ingredients

1 lb ground beef or turkey
1/2 chopped onion
1 can of enchilada sauce
1 can of black bean drained and rinsed
2 cups of brown rice
1 can chopped chilies
2 tsp of chili powder
1 tsp Minced Garlic
1/2 tsp of oregano leaves
1 tsp of ground Cumin
1/2 tsp Crushed Red Pepper
1 packed of wheat tortilla's
2 cups of low fat Mexican cheese
1 cup of low fat sour cream (optional)
Directions
1. In separate Pan bring water to a boil and then add brown rice; drain
Brown beef or turkey and onion in large skillet on medium high heat; drain
Add Enchilada sauce, beans and green Chile's; mix well.
Stir in all of the Spices; add red pepper to taste,if desired.
Bring to Boil Reduce heat to low; simmer for 5 mins.
2. In a 13x9 baking dish with nonstick cooking spray. Layer bottom of Baking Dish with Wheat tortillas; spread 1/2 cup of beef or turkey mixture; add low fat shredded Mexican cheese to top of each beef or turkey mixture; and repeat; last tortillas add reminder of enchilada sauce and low fat shredded cheese to top;
3. Bake at 350 for 15 mins or until heated through. Let stand for 5 minutes before serving. Top with Low fat sour cream (optional)

Christmas Cheer in May

I was suppose to post this in December and since it was saved i thought i would share anyway! I slacked big time on my blog.
We have been busy with shopping, breakfast with Santa and getting the house ready for family coming up from Florida!
This year we are having Christmas Eve dinner at my house and then a breakfast brunch on Christmas Day!

Shutterfly has my ♥

Recently I came across  Shutterfly, thanks to some of my blogging friends!! Well I was sold right away there prices were great and the amount of variety was amazing. It's a great way to share photos and memories of your loved ones.  I started my first shutterfly book last month. I decided since scrap booking is so time consuming and costly, that I was going to try to make my own photo book online.  It was so easy to make and lots of fun. I'm excited this year to be doing photo books for all the grandparents and of course one for me! The book consists of photos of January - August 2010 of all our special moments and events! Which I wanted to say it turned out amazing. At the end of each photo book I put a different picture of each set of grandparents with LK (my son)which makes it a little more special!!
Every year I do make my own Christmas cards online at our local photo shop, but this year I'm using Shutterfly the quality of the picture on the cards are so much better. There are so many to choose from. Check out Shutterfly Christmas Cards HERE!!!  They also have Holiday Story Cards which is a specail way to update friends and family afar on some special events are milestone your little ones have done!!

Every year I also  make a calendar for LK's (my son) great grandpa he loves looking at the different pictures of his great grandson and since he lives in Florida we do not get see him that often. They also have  Shutterfly Calendar's  that are perfect for a Christmas Gifts to a loved one or family friend. I know I will be ordering from Shutterfly you should too!!!

Camp fires and Marshmallows

This past Labor day weekend we went camping with my In Laws. They drove up from Florida and met us at the camp site in North Carolina. It was such a relaxing and beautiful weekend. We stayed in a small cabin which only had beds in them, no bathrooms or running water. It was diffently more of a camping experience than the one we experience this past July.  We had a great time catching up and watching the guys play Ladder Ball. Lots of Camp fires and roasting marshmallows were in our nightly routine. LK loved cooking hotdogs on sticks over the camp fire.  We took LK fishing at a lake near by, they didn't catch anything but we had a blast.  I will have to say this was one our better trips this summer. And what a way to end the summer with Family and Great Memories.

My son told us, Now Mommy this is REAL camping! So we knew we had to take him camping in Shenadoah Va, my husband and I went camping in Shenadoah soon after we met. It was one our favorite trips together. So this will be a surprise for our son LK he will not know about  this until we get there!! No cabins there, we will be pitching our 12 person tent for two nights and using nature for well you know! :)

Shark, Sharks and more Sharks


In July we went to  Cavert Marine Museum in Solomons Island, Md every year they have a Shark Fest. So this year we went! My Inlaws, our Friends and their kids also came, they had a blast. They had a pool inside the museum which held 5 baby sharks, LK thought this was the coolest thing! But he did say he thought JAWS would be there! lol  He was a little hesitant when he was told he could touch them. But as you can see in the pictures he was so into after he knew they were not going to bite his fingers off.

First day of School




Today was LK's first day of school, he was a little nervous this morning but we made it with no tears!  For the last three years I started taking pictures of him by the Big Tree in our front yard. So I went back to those pics and couldn't believe how much my little boy has grown. He started Prek-3 at the church in our neighborhood and he loved it, so I sent him there for Prek-4 the next year. He called it his little school when he started Kindergarten in the BIG school. This year is so different because he will no longer have center time and nap time. I talked to him about it and seemed to understand, he was more worried about having recess time! :)
